Because there are so many bees and so many flowers we cant count them all, and, as you pointed out they do fly very fast! How we get around this is by sitting in one spot for 10 minutes and only counting the insects that fly into the marked off area we are looking at. We then do this same observation at other randomly chosen spots (like you have replicates of your litter treatments) to get a better idea of how often and what type of insects (including the solitary bee) are visiting the flowers.
